Bleasdale Sparkling Shiraz N.V What's any special occasion without Bleasdale? Effusive and generous, Bleasdale's effervescent red gives so much more. Fruits steeped in liqueur, mint and ribena following quickly on the heels of a luscious coconut/ carob oak, cherry ripe palate. There is nothing subdued about this wine. It comes on like an ebullient, cream and froth driven chocolate torte, heavy on the maraschino cherry.

Cockatoo Ridge Sparkling Brut Cockatoo Ridge is headquartered in the Barossa Valley on the principal road between the two main Barossa towns of Tanunda and Nuriootpa. This high profile site was once the old Hardy's Siegersdorf winery, built in 1930. This wine is not only delightful and pretty to look at, but it offers a robust palate the tickles with stonefruits and the tang of summer punch. Bottle fermentation and a handsome resting on lees provides both the natural effervescence and the soft, creaminess desirable in sparkling wine.

Croser Sparkling 2007 Croser is only disgorged when there is market demand, ensuring extended contact on yeast lees, which contributes to the enormous palate and texture. Croser is at once bigger in colour, and more intense in flavour, dominated by the ripe Jonathon apple of the Pinot Noir content, an impressive wine fashioned from sophisticated batches of fruit from the Piccadilly Valley, which is at the core of the Croser style. Warm flavours, the sweetened tones of marron glacé and caramel are offset by a lively and refreshing acidity. The palate is seamless and even in structure with richness and complexity of flavour, showing ripe fruit, melony butternutty and supremely satisfying.

dArenberg Peppermint Paddock Sparkling Chambourcin The grapes for this sparkling red wine come from a vineyard surrounded by peppermint gum trees. Traditionally this block has always been difficult to cultivate and vines have struggled. The young, lifted attacking aromas are dominated by a full range of summer pudding- like smells. There are some spicy cinnamon as well as sarsaparilla, blackcurrant leaf and some strong boysenberry jam aromas.

De Bortoli Sacred Hill Sparkling Brut An excellent everyday sparkler by an estate that has earned a reputation for producing exemplary wines across many pricepoints and styles. Sacred Hill Sparkling Cuvée is a clean effervescent wine with fine tropical aromas and flavours, fruit driven and easy to enjoy. The palate is dry and delicate, a very refreshing, easy drinking sparkling style wine, with fresh fruit flavours and a delicate, creamy mouthfeel, finishing with crisp acidity. A versatile wine that can be enjoyed on its own, or partnered with any fine faire.

Domain Chandon Cuvée Riche A quirky selection given that this is in the somewhat sweet, Demi-Sec mould. But it's a delicious individual of rich flavour and impeccable balance. The complex is enhanced by the natural fruit sugars, and the result is a richer more exciting wine exhibiting a creamy texture and persistent mousse. A lovely balance between the toasteyness and marvelous fruit across the the whole length of the palate, Cuvée Riche culminates in a refined finish.

Domaine Chandon Blanc de Blancs 2005 Domaine Chandon fashions an exciting variation on the traditional blended sparkler. Blanc de Blanc is exclusively Chardonnay, a wine of intense elegance, cleanliness of aroma and flavour, and heightened varietal expression. Fine and clean, juicy with true Chardonnay personality, laden with wafts of elegant grapefruit, nectarine and nashi pear, softly acidic with warm nuances of freshly baked mince tart. Although technically a dry wine in Brut styling, the palate delivers a creamy, soft and totally harmonious balance, delicate yet complex flavours of fresh stone fruits and nuts.

Domaine Chandon N.V Brut Some of Australia's best sparkling wine vineyards, Pinot Noir and Chardonnay are harvested and pressed to techniques very similiar to parent company Moët Chandon. The batches are vinified separately to maintain purity. Secondary biscuity aromas, whisps of honeysuckle and enchanting hints of cnadied peel, angelica and dried apricot. The front and middle palate is round and creamy, the flavours are complex and discernible.
